I took this course in Winter '76 in the MLB and although I cannot recall the professor’s name, he was 40 years ahead of its time. This was before we had terms such as “carbon footprint” or “sustainability” which have become ubiquitous in today’s climate change terminology. I do recall the professor discussing calories used in the growing of pineapples and their transport to Michigan and that perhaps, it would be better, in the context of energy consumed, to use locally grown foods.
